Together MIT and Tufts University we have developed an innovative biomaterial coating that dramatically extend shelf life of perishables food.  The coating is made of silk and is natural, biodegradable, odorless, and totally edible. It acts as an ultra-thin protective shield that prevents moisture loss and oxidation. Last May, we published an article in the Nature Journal, exhibiting how the silk coating technology extends shelf life of climacteric and non-climacteric fruits and vegetables by up to 50%. With our coating technology, we aim to reduce food waste from the farm to the home in both across developed and developing countries.
